Hearty Beef Chili

Simple recipe that goes a long, long way.

Ingredients:
2 lbs. ground beef
2 tbsp. olive oil
1 large onion, diced
1 tbsp. minced garlic
2 tbsp. parsley, chopped
1 6-oz. can tomato paste
1 2-lb. can diced tomatoes, drained
1 can red kidney beans, drained
2 tbsp. Dijon mustard
2 tbsp. red wine
1 tbsp. lemon juice
2 tsp. pepper
1 tbsp. salt
2-4 tbsp. cumin
2-4 tbsp. chili powder
1 tbsp. dried basil
1 tbsp. dried oregano

Heat oil in a large pot and saute onions and garlic for about 10 minutes, until translucent. Add in ground beef and cook until fully browned. On low heat, add in tomato paste, salt, pepper, cumin, chili powder, basil, oregano, and mustard. Then stir in wine, lemon juice, diced tomatoes, kidney beans, and parsley. Allow to simmer for 10 minutes and then add more seasonings to taste. Serve with garlic bread or corn bread and enjoy for days.

Chicken Cordon Bleu

This meal is easy to make and classy to eat!

Ingredients:
5 chicken breast cutlets
5 slices of ham
5 slices of swiss cheese
1 c. bread crumbs
1-2 eggs

Pour the bread crumbs onto a plate or bowl. In a different bowl, whisk the eggs. Take each chicken cutlet and dunk it in the egg mixture so that it is coated. Then lay chicken in the bread crumbs and flip each piece over, so that both sides are fully covered in bread crumbs. Lay the cutlets in a casserole dish, cover with a slice of ham and a slice of cheese, and roll each one up. Bake at 350 for about 40 minutes, or until the chicken is cooked all the way through. Serve with rice or couscous and enjoy!

Avo-Cuke-Corn Salad

A refreshing side perfect for summer. No better way to celebrate being together!

Ingredients:
1 avocado
1/2 can corn
1 mini cucumber
1/2 lime
1/4 small onion

Dice avocado, cucumber, and onion. Place into a large bowl and add corn. Squeeze lime onto mixture and stir. Serve alone or with tortilla chips.

Mango Raspberry Muffins

We can’t not make muffins when we’re together. So here goes nothing.

Ingredients:
1 3/4 cups whole wheat flour
3/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1 cup vanilla almond milk
1 teaspoon vanilla
4 tablespoons butter, melted
1 1/4 cup frozen mango chunks, chopped
1 1/2 cups frozen raspberries

Mix together the flour, sugar, baking powder and salt. Add in the egg, vanilla, and butter. Mix in the fruit until fully combined. Bake in a muffin tin at 375 for 30-35 minutes. Makes 15 muffins.

Southwest Style Guacamole

When in Palo Alto…

Ingredients:
1 avocado
1 tomato, diced
1/4 medium sized onion, chopped finely
1/2 lime, juiced
1/2 can whole kernel sweet corn, drained
1/4 c. blackĀ  beans, drained
chili powder
minced garlic
pepper

Mash the avocado in a medium sized bowl. Add in the tomato, onion, corn, beans, and lime juice and mix well. Add a dash of chili powder, minced garlic and pepper. Add more of these to taste. Serve immediately with your favorite tortilla chips!
