Avo-Cuke-Corn Salad

A refreshing side perfect for summer. No better way to celebrate being together!

1 avocado
1/2 can corn
1 mini cucumber
1/2 lime
1/4 small onion

Dice avocado, cucumber, and onion. Place into a large bowl and add corn. Squeeze lime onto mixture and stir. Serve alone or with tortilla chips.

Southwest Style Guacamole

When in Palo Alto…

1 avocado
1 tomato, diced
1/4 medium sized onion, chopped finely
1/2 lime, juiced
1/2 can whole kernel sweet corn, drained
1/4 c. blackĀ  beans, drained
chili powder
minced garlic

Mash the avocado in a medium sized bowl. Add in the tomato, onion, corn, beans, and lime juice and mix well. Add a dash of chili powder, minced garlic and pepper. Add more of these to taste. Serve immediately with your favorite tortilla chips!


We’ve tried a bunch of different guacamole recipes and they’ve all been delicious, but this is a slightly alternative one that we really enjoyed.

1 avocado
1 small tomato
1/4 onion, diced
1 ear of corn, cooked
Pinch of salt
Cilantro, chopped

Drizzle fresh lime juice over diced onion, sprinkle salt on top, and stir. Remove all the seeds from the tomato and dice. Combine onion, tomato, and cilantro. Cut the corn kernels off the cob and add to the mix. Finally, cut the avocado in half and remove pit. Leaving the skin on, cut through the flesh to make a grid of squares of about 1/4-inch. Spoon the avocado out of the skin and add to other ingredients. Stir together just a few times, making sure not to mush the avocados. Add more lime juice to taste.
