Chocolate Oatmeal Peanut Butter Cookies

These peanut butter cookies are for those who like some extra crunch and sweetness.

2 tablespoons butter
1/2 cup creamy unsalted peanut butter
1 egg
1/2 teaspoon vanilla
3/4 cup flour
1/2 cup packed dark brown sugar
1/2 cup oats
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup water
pinch salt
1/4 cup mini chocolate chips

Melt butter and stir in peanut butter. Add egg and vanilla and mix well. Add flour, sugar, baking powder, baking soda, salt, oats, and water. Mix in mini chocolate chips. Scoop spoonfuls onto an ungreased cookie sheet and flatten so that cookies are about 1/2 an in thick. Bake at 375 for 10-12 minutes or until dark brown on the edges.

Pecan Pie

Nothing screams fall like a good ol’ pecan pie. We made this for Thanksgiving dessert and it was a hit. This recipe doesn’t include bourbon, but you can add 1 tbsp to the filling for some added flavor.

1-3/4 c. old-fashioned rolled oats
3 tbsp. sugar
pinch of salt
1/2 stick cold butter, cut into small pieces
2 tbsp. cold water
Cooking spray

Combine oats, sugar, and salt in food processor for until finely ground. Add butter and pulse for about 10 seconds. Add water and pulse for another few seconds. Spray the pie pan with cooking spray and press crumbled mixture firmly into the pan until it covers the whole pan and has the appearance of a crust. Bake at 400 for 12 minutes and cool for 5.

3 eggs
3/4 c. sugar
pinch of salt
1 c. dark corn syrup
1 tsp. vanilla
1-1/2 c. pecans

Combine all of the ingredients except the pecans and mix well. Stir in the pecans. Pour filling mixture into the crust and bake for 10 minutes at 425, and then another 30 minutes at 350 or until browned on top.

Coconut-Pecan-Chocolate Chip Cookies

We decided to make cookies out of the ingredients we had in our kitchen. This recipe is for one amazing flavor we made, but we actually made another variety too and will discuss that below.

1 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
pinch of salt
3/4 stick of butter (6 tbsp.)
1/2 c. white sugar
1/4 c. brown sugar
1 tsp. vanilla extract
2 eggs
1 c. sweetened shredded coconut
1 c. chocolate chips
1/2 c. pecans

In one bowl, combine softened butter, white and brown sugar, eggs, and vanilla. In another bowl, combine the flour, salt, baking soda, and baking powder. Pour the liquid ingredients into the bowl of dry ingredients and mix well. Add in the coconut, chocolate chips, and pecans. Distribute on baking sheet and bake for about 10 minutes at 375, or until they begin to brown on top. Makes about 2 dozen.

The second variety we made used the same base, but then we added 1 c. of oats, 1/2 c. of walnuts, and 1/2 c. of M&Ms. These ones were delectable as well!
